A quick and easy one-pot Mexican-inspired quinoa dish packed with protein and flavor. Perfect for a wholesome and satisfying meal.
Ingredients:
- 1 cup quinoa, rinsed and drained
- 1 can 15 oz black beans, drained and rinsed
- 1 cup corn kernels fresh or frozen
- 1 cup diced tomatoes
- 1 bell pepper, diced
- 1 small red onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin powder
- 1 teaspoon chili powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 2 cups vegetable broth
- 1 tablespoon olive oil
- Juice of 1 lime
- Fresh cilantro for garnish
Instructions:
In a large pot, heat olive oil over medium heat
Add garlic, red onion, and bell pepper
Saute until vegetables are softened
Add quinoa, black beans, corn, diced tomatoes, cumin powder, chili powder, paprika, salt, and pepper
Stir to combine
Pour in vegetable broth and lime juice
Bring to a boil
Reduce heat, cover, and simmer for 15-20 minutes or until quinoa is cooked and liquid is absorbed
Fluff the quinoa with a fork
Adjust seasoning if needed
Serve hot, garnished with fresh cilantro
