Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup shredded cheddar cheese
- 1 cup crushed cheese puff snacks
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- Salt and pepper to taste
- Vegetable oil for frying
Instructions:
Preheat oven to 375F 190C
Make deep cuts across each chicken breast, being careful not to cut all the way through
Season the chicken breasts with salt and pepper
Stuff each cut with shredded cheddar cheese
Coat each stuffed chicken breast in flour, then dip in beaten eggs, and finally coat with crushed cheese puff snacks
Heat vegetable oil in a skillet over medium heat
Fry each chicken breast until golden brown and cooked through, about 5-6 minutes per side
Transfer the fried chicken to a baking sheet and finish cooking in the preheated oven for 10-15 minutes, or until the cheese is melted and bubbly
Serve hot and enjoy!
