Quinoa Caprese Salad



A healthy, fresh, and filling Quinoa Caprese Salad that combines the nutty flavor of quinoa with the vibrant taste of cherry tomatoes, creamy mozzarella, and aromatic basil. Tossed in a simple balsamic vinaigrette, this salad is perfect for a light and nutritious meal.

Ingredients:

  • 1 cup quinoa, rinsed and drained
  • 2 cups cherry tomatoes, halved
  • 1 cup fresh mozzarella balls, halved
  • 1/2 cup fresh basil leaves, chopped
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions:

Follow the directions on the package to cook the quinoa, then let it cool

Put cooked quinoa, cherry tomatoes, mozzarella, and basil in a large bowl

Salt and pepper should be mixed with olive oil in a small bowl

Mix the quinoa and vegetables together, then add the dressing and toss everything together

Put it in the fridge for at least 30 minutes before serving so the flavors can mix

Add more fresh basil leaves as a garnish before serving
